Ford offers a 5.0L Ti-VCT V8 in the Mustang. Plenty of room in the Maverick engine bay. Would just take a skilled fabricator to make it work.

Look at the new f150s with the coyote engine that are drag racing.
I think they tend to have Ford Performance superchargers in them. (available in multiple grades).

Maybe a 1966 289.
note that you need to deduct roughly 1/3 from those HP numbers. Reported HP is gross through '71, and net from '72 on. You'd think from data sheets that there was a huge drop in '72 in general, but no; they tended to be identical between the years. The Cadillac 500, for example, went from 370 to 235 reported, with absolutely no difference.

Trouble is the engine is transverse mounted so the only V8 I can think of is the Cadillac NORTHSTAR. 300 hp right out of the box.
I love my northstars!

I toyed with the idea of a v8 conversion when the engine on my Miata went the second time. There are off the shelf conversion kits for both Ford 302 and GM LS; just add motor (and a small fortune in suspension upgrades that utterly kill any economy aspect of the project).

I speculated about a Northstar, and finally concluded that the correct way to way to get a Northstar Miata was to take a manual transmission STS, chop the frame, and put the Miata body on top.

[and it's not like the Miata needs the power--I won't name names, but passing a semi on a 6% extended grade, top down, AC on full, a glance down showed 105 and still accelerating!] {anyway, mine will get a focus 2.5, unless the long shot that it's just the timing chain pans out}

If the need is speed, retrofit a Tesla Plaid system in there.
getting back to the Miata STS . . .

I could see doing a V6, hooked up to the right transmission. But there some nice 4-cylinder modifications that can be done as stated by 1929 above, that won't put you in the "poor house". Maybe a V4 if you are looking.
2.7 Eco Boost are a 60 Degree V-6 IIRC and are pretty narrow and would be Nice. They do have them in the Edge ST and Big Bronco.

At SEMA there was a shop called Geaux Moto competing in the Ultimate Street car Challenge with a 2.3 EcoBoost swapped ND Miata. It was putting down 400hp at close to stock weight. Awesome setup!

I have zero issues with swapping a V8 into anything... Think Carroll Shelby and the Cobra..

There is also "No Replacement for Displacement"

Aftermarket heads / big cam / ton of tuning / full exhaust

Everything works... Heat / AC / Factory electric power steering and the car passes inspection. I drive anywhere and everywhere .. its not my daily but its been driven to my office numerous times and makes 430HP at the rear wheels.. its an absolue blast!

Easy, just drop the tailgate and you can set that crate motor right in the bed.
Just mount it in the bed using a Toronado TH425 FWD trans in the back.

Thousand of dollars to create a less powerful drive train or a frame twister. Ever notice that some of the ideas on here are ideas NO company that wants to make money would do?
Funny thing about those 289's. Dimensionally they are the same as the 302 (5.0L).
My dad and I put one in a 1974 Mazda RX4 and ended up with the most awesome death trap I ever drove... for a very short time. We got rid of it before one of us wrecked it and got k!lled.
Anything can be done, but the real question is whether or not it should happen. Personally, if I had the disposable cash, I would have a Coyote Maverick. Love that sound.

It would be like this VW I saw last fall. Interesting but most people laughed at it.
