I can tell from the video on Etsy that the bracket is installed incorrectly at the wrong angle causing this issue. Save the money, loosen the top bracket bolt and rotate the plate counter-clockwise until it sits correctly.

Random musings.
The attaching end of my23 cable has a small bend in it.

Rick I replaced the driver side tie down with one made from one of our members.

That's me (thanks Glen!). Yes, when you install the tailgate strut and remove the factory tie-down bracket which now interferes with the strut, you lose a useful tie-down point. I made a replacement tie-down for mine.

Works well and clears the new strut and no issues with the cable. Enjoyed making it enough that I keep making more. I have a thread here in the For Sale forum if anyone would like one. Don't lose a tie-down point!

Yes caused by leaving my tailgate down going over rough roads with my Catrike.

I installed a tailgate assist strut, following the instruction video - but the tailgate cable binds on opening and closing. Did I do something wrong? I considered just removing the cable, but wanted to see if there are others who've had and overcome this issue?
Try this out

It works great!

I had that problem. It was because the plate the strut attaches to rotates, moving the connecting point of the strut. The cable can then move behind the strut when the tailgate is closed.

Solution was loosen the bolt holding the plate, rotate the plate so it's vertical, and then you have to really crank down on the bolt so the plate doesn't rotate again.
I had the same issue and was able to fix it the same way.

I had the same issue when I installed one. There was just a slight rubbing. I repositioned the bracket to make sure it was perfectly vertical and tightened it down. Still a slight rub. I loosened it all and used two very large wrenches to bend the cable bulge and metal end just a bit to avoid the rub.
A large vice would have made it it super easy.
No more rub at all.

I hear sound, see no video
It looks like you left the bottle opener install, there is one on each side of the tailgate, in case you are a two fisted drinker
