I have a 26 qt cooler that is 12v or 120v. Can I leave it plugged in to the 120v outlet in the bed of my 23 XLT hybrid with the lux pkg and leave the ignition on for a couple of hours while shopping?

Green light to try it in the short term, imo. The ICE will run and shut off as-needed. The real solution is a power station in the middle somewhere. I'm no expert, but you need a power station/battery.

Ignition on and doors locked up with keypad?

Ignition on for a couple hours while shopping? I wouldn't have to worry about if its ok, the Mav would just be gone.
Must be nice where you live. No such luck up here.

Yes it will work just fine. The truck will run periodically, but it doesn’t care.

I have found that some coolers will be too much for 400w, but mine works.

Technically true, but I also believe it will auto-shutoff the ignition after half an hour of idling.

If the cooler is well insulated, why would you want to do this ? Cool it down beforehand.

I mean, if the key's in there it won't.

I leave my Hybrid on when I go to the drive in movie theater with my wife to keep the radio from turning off.

Go into menu on steering wheel. I do not remember where but there is a selection for 30 minute max idle time. You will have to be sure that is turned off. You will have to put truck in park and set the electric parking brake to allow door to be locked with key pad (or possibly 2nd key fob? Have to try that). Or I think remote start locks truck but it may have separate or the same 30 minute run time limit. Have to test it. I believe that the 120 inverter on requires continual ice on have never used mine so don't know. I know the 12v circuit will let the ice cycle and would be electrically more efficient.

My 2022 does not shut off.
I do not remember changing any settings.

Maybe you are confusing this with the 30 minutes only allowed to be in "Neutral" without entering Neutral tow (Toad) mode.

Maybe you are confusing this with the 30 minutes only allowed to be in "Neutral" without entering Neutral tow (Toad) mode.
My 2022 first edition lariat would extended run at least over 90 minutes initially BUT AFTER AN UPDATE it would shut off after 30 minutes. I found with the menu the 30 minute idle. I will look it up when wife brings it home.

I would buy a big power booster to run the cooler and plug it into the outlet of the truck to recharge.

There is also energy efficiency to consider. Every time you convert one voltage to another, you lose a portion of the power. The technology used in the cooler would probably determine its native voltage. e.g. If it's thermoelectric (no compressor), it probably runs on 12V internally and uses a 120V AC adapter for household use. In this situation, you would reduce its load on the host vehicle by running it directly from the 12V accessory outlet instead of the 120V inverter. The power savings would probably be only 25-30%, but easy to do.
