Convenience. It is pretty nice to get in a car and simply push the button (I don't have it, but my wife does).My wife's car has push-to-start and it just makes me uneasy, for some reason. We have had keys and tumbler ignitions down for awhile now, why try to fix what isn't even remotely broken?
But people could say "The old way worked just fine" for everything: power windows, cruise control, power locks, automatic transmission, auto high/low beam lights, variable speed wipers, wireless Apple/Android Carplay,...
The list is long of things we develop out of convenience. Though something like the key fob might be cheaper. A tumbler ignition & key fob might cost $50 while a button, key fob, & fob sensor might cost $40. The main reason for it is probably convenience, but someone probably said, "We can put a man on the moon! Why can't I just push a button to start my car?!?!"
