You can use your voice to verbally change all the AC controls without taking either hand off the wheel or either eye off the road. Much safer than either set of controls.
Regarding the controls: the further you look down your dashboard, the more your eyes are off the road and the more dangerous it is.
The feel of real buttons means you can glance down to put finger on controls and keep eyes up while fingers do work.
Touchscreens are notorious for people having to look at them much longer to perform the same function.
Sure voice commands would be nice, plenty of times those don't work at all, and lots of people aren't accustomed to using them and/or won't want to. So on average, touchscreen will cause the roads to be more dangerous.
