So, I bought a 5x8 utility trailer says weight is 325 pounds. What do you recommend what mode I should drive in. Does it really need tow/haul empty with a 325 pound trailer? Would you recommend driving in normal mode?

The best part about tow/haul is braking action. I use it in my Transit-based RV when towing. It really makes use of downshifting more efficiently than I could...but 350 lbs is not that much. If you have Bubba in the back seat, he could be 350 lbs!

Hey I resent that stereotype comment.

Empty. Normal is fine. Even a few hundred pounds on it would be fine. You'll notice the sluggish of the lower rpm range that you have to throttle harder. Plus as stated for braking it goes to 100% immediately.

But it will lessen mpg noticeably

I tow a 6x10 with about 1000 lbs on it twice a year over long distances. When the terrain is flat I use normal and only go into tow/haul when in the mountains. However, I also have an 8x12 enclosed that I use to transport a small sportscar and when towing that, I'm always in tow/haul. Long story short, I think under 1500 lbs on flat areas, you'll probably be fine in normal.

An option I use on my Maverick and Silverado is to use the tow mode when I am pulling a hill to take advantage of the shift points, but revert to standard when on the flat.

I would use tow/haul when you get over 1000 pounds.
