With about 30 minutes idle time, is this normal with a 2.5 hybrid engine?

Yes, specially when you consider your idle time.
Some Mavericks are a little over optimistic on the computed mpg display. If your OCD kicks in. You can alter the displayed mpg by entering the engineering mode.

Thanks , I'm happy with the 38.3 mpg, it was over a 315 mile trip, half of it in hilly country

I actually did good with my hybrid in the Ozark hills.

There are so many factors in getting excellent gas mileage that its hard to get them all straight. Higher speeds in something with the aerodynamics of a brick obviously factor in, but what speed, level ground or hills, temperature, weather, what tires, how many passengers and how much load, hauling a trailer, etc. For most people, the EPA-rated fuel mileage is on the low side and can be easily beaten all the time.

Were you around to notice how much the ICE actually ran during that 30 min?

If AC was going - I've had about 3-4 run times of 1-2 min each as it got the HVB from 30 back to 40% SOC.

Usually idle doesn't effect the hybrid that much. Your MPH sure, but not MPG unless it's cold and ICE is running for heat.

Track about 6 fillups that way - same pump would be great, but at least same amount of level.
Once you have an avg between math and stated and have an amount off - then the ET mode adjustment can be used to fine tune your readout. If interested.
It effects the Distance To Empty figure too, but that can be thrown off much more by just the chunk of prior mpg it's been tracking, and what falls off the logs. So not super useful there.

I get 34 mpg on hwy with 2.0 egoboost

the hybrid is capable of 50+ MPGs if you drive it for gas mileage.

Still breaking in my Tremor, got 1200 miles on the clock now.
Getting 23 in town and 26 out of town.
My one Interstate ride gave me 29 mpg

The Tremor with It's Ecoboost sure does have some balls, considering Its a little 4 banger.
