Why does my Maverick show 42.5 mpg when I’m only getting 38.6 ?

How are you measuring and over how long a distance? The vehicle might be off by one or two percent, but not that much. I'd trust its numbers more than whatever you're using.

You can adjust it in the service menu- not sure why it's so "optimistic" from the factory.
I think ours is about 2mpg off. (16k miles, 2 years)

Yep AFE adjustment in engineering mode.

Plan to adjust my down once I hit 5k miles. Currently Maverick shows 33.9 miles per gallon over 3,900 miles but I am only getting 32.4mpg hand calculated.

roughly 5% optimistic and I will adjust down.

If you take the average of 100 drivers:
The trucks from the factory read 5% high.

So in the secret menu, use AFE to change the math formula to estimated average fuel economy x 950/1000.

Then the dash readings will be multiplied by 95% and will match the pump pretty closely.

Luckily I get along fine without extreme accuracy.
My Eco is within half a mile on mpg’s. But it took most of my current miles to settle down. It’s bone Stock.
Was not accurate at all until I got over 2,500 miles.

With only that info provided - these answers could be as bad as the truck's system estimating with incomplete info.

Because you've only had 1 tank of gas so far, so expecting too much from estimates.
Because there is no exact reading of fuel volume used/remaining in tank, only fuel injected in grams while driving.

Because you filled up with truck tilted with filler up high so got more fuel.

If this is the estimate you got so far - I suggest don't even look at the Miles To Empty figures!

Even after doing the referenced adjustment, driving scenarios change, as does weather.
Estimates can still get off track. This is after adjustment I made early on.

Mine is usually pretty close if I reset the trip computer at fillup Ususally within a couple of tenths.

None of the estimators in vehicles are very accurate, they are electronic best-guess based on a number of factors, including driving style. They are in the ballpark, but shouldn't be counted on as gospel. Same goes for the "remaining miles until empty" calculation; best to just look at the gas gauge needle and fill up if it gets to 1/4 tank.

Best to do a hand calculation on fill-up to get an idea of what's really going on. Other than watching for large changes, that may signify mechanical issues, the observation of current mpg is trivial and distracting. You're not going to change it much, unless you drive like a teenager and then drive like an adult. Or vice-versa.

I see they added more gas stations.
The sign used to be 185 miles to next gas.

You're close. And I'm sure close enough. But still biased a little optimistic. With the fine control of 0.1% we have you could lower your bias by 1% or 10 more points out of 1000 seeing as you have data to back up that you are at 99% accurate in the long term.

IF it took a lot if effort, I'd leave it too.
Since it's easy, I'd probably adjust one more time. Maybe by 9 points out of 1000. Just because I can. 🤓
