So this is new to me- The Hybrid has 3 more inches of extra interior space in the front compared to the Ecoboost- Is this due to the turbos exhaust manifold or something ?

I think you may be misreading the table.

It looks like the front space difference is between FWD and AWD.

Maybe AWD has a bigger hump?

It's an interesting chart. Where'd you find it?
The tech specs charts I have show just the 100.3 cu ft number for total passenger volume.
(I know you meant cubic feet and not inches.)

Why would 3 cu ft disappear from AWD vs FWD front passenger space?
It's the rear suspension that's different.
I wonder if someone compared a loaded AWD with moonroof to a base FWD without?

I believe it is the hybrid traction battery that is under the passenger seat for the hybrid.

They had to raise the floor slightly to crowd the 12v battery under the seat so that most of after market batteries would be too tall along with the HVB under the floor being so tall the maverick would have trouble traversing "Detroit" deep chuck holes!😂
