Well, if this gentleman is correct, the soft folding cover is the trifold variety (rather than soft roll-up) and I'd be fine with that to save a few $.

Just watched it again. Unfortunately he showed the first fold of the trifold hard cover instead of the folding (or roll up) cover. This is a photo of the soft cover.

Ford needs to get descriptions and corresponding pictures to match up. To me folding and roll-up are 2 different things.

That's where I come out too, at least in the plain meaning of those words, though I agree with @oljackfrost that those have been used interchangeably on occasion.
