I just did over 6000 miles on my hybrid, driving the Alcan highway. I averaged about 43 mpg on that trip, with an average speed of about 50 mpg. It does better than that in the city, and worse on faster highways. (All mpg numbers from the screen, not hand calculated.)

If mileage is your main criteria, there is no comparison, the EcoBoost will never come close to those numbers. The EB at its best will only be a little worse than the hybrid at its worst.
I agree the EB could not meet 40plus MPG with above 50 mph over 6k. Do you have a photo of the trip computer to back up your claim?

No, I don't.

Any hybrid owner would attest that the 43 mpg I experienced was a little on the low side for a trip of that distance, at such a low average speed.

That is awesome to hear. At what speed does the gas motor start to take over vs battery? I had always thought the battery would be for stopped or lower speeds, but if it helps on the highway that would be a great way to get good MPG.

They can work together at any speed. It is not unusual to see 10-20% of highway miles being "electric." ( I just made up those percentages, but again any hybrid owner would report a similar observation.)

No, google it. It's very well documented that it was addressed with a redesign in 2019/2020 and the updated design doesn't have this issue.

Not sure but these issues are showing up in the 40-60K range IIRC

I took this today. It is a few miles after the 6000 mile trip was completed, but I also set the trip computer on the 3rd day of the trip. So it is less than 6000 miles, but it shows how the hybrid is doing so far for me.
