Which wireless charging mat did you order? URL link please.
I just bought one off Amazon..I got it last night and tested it on my phone, works great! I have several different shapes & sizes of these all over my house at work etc..
Here's what I ordered: JADJ Wireless Charger, Qi-Certified 15W Max Fast Wireless Charging Pad (No AC Adapter) for iPhone SE, 13/12/11 Pro/Pro Max, Xs Max, XR, XS, X, 8, 8 Plus, AirPods, Galaxy S20 S10 S9 S8, Note 10 9 8

The dongle plugs in so that your phone (AndroidAuto/Apple CarPlay) syncs to it via Bluetooth and then you can run AA/ACP wirelessly so you don’t have to plug your phone into the actual vehicle. So this device isn’t wireless, it allows your phone to operate wirelessly.
Not bluetooth. Bluetooth is for low power, low bandwidth. CA/AA is WiFi ;)

This is incorrect. You can use these dongles on any of the 3 trim packages.
Personally bought one for my XLT and it did not work. Per the manufacture infotament needed to be sync. Which in the XL and XLT it is not sync

I've only been in a couple of cars that supported Android Auto through wireless connection.

In both cars, the head unit connected to the phone through Bluetooth.

Are some cars (or aftermarket units) using Wi-Fi for that car-to-phone connection?

that doesn't make any sense. all this device is doing is acting as a proxy between your phone and the head unit... so as far as the head unit is concerned, you have your device connected via a wired connection.

edit: per AAWireless' website,(which incorrectly lists the model year) it is compatible:

I don't know what to tell you. CA/AA is WiFi, simple as that.

I couldn't find this one on Amazon. Do you have a link?

Also, what shape is it? Does it fit in the phone holder in the console?

Yes it does. I tried both ports.
I posted this Q in another thread - what happens when a second phone is plugged into the other port (like if the passenger wants to charge their phone)? Will the second phone override the AA/Carplay hookup?

It's almost as simple as that. It seems that you have to connect your phone to the car by Bluetooth first, then Android Auto can proceed to establish a Wi-Fi connection

I think that explains my rental car experiences where the head units insisted on connecting to the phone through Bluetooth. Apparently that's part of the setup process, but not part of the normal running process after initial setup.

Read the part you didn't highlight. "The first time you connect".

I replied to you saying CA/AA is not Bluetooth, but you seem to double down on it. It's just not. It's WiFi.

On my car, you just type in the SSID password for the WiFi. That's it, no BT needed.... because.... CA is WiFi.
