However, I just received an email from Ford with my original build, and it's now scheduled with a Vin. Am I able to make changes while it's scheduled to be built?

Go here, there should be a big blue button that says "Start Chatting". You will need to give them your sales code and order code and they can tell you if you have a VIN or not.
