They went to dealer. 2020 model on lot had an 8" screen; 2019 model on lot didn't. They got the 2019 because they preferred the smaller screen.
Every 2019-2022 Escape other than the base S trim has 8" Sync 3. S has a 4.2" non-touchscreen.

Where they do differ is how the screen is integrated into the dash.

Smaller screen would be fine for me.
Prefer more tactile controls than screen size. Temperature display on the climate control dials would really make me smile.

This is still irrelevant to what the dealer had on the lot at the time they made their purchase and why they chose what they chose.
The options were the same whether 2019 or 2020, that did not change, so the model year was apparently irrelevant to the decision, then. They didn't want a touchscreen but rather the base system.

Escape seems to be getting more mid tier. As the Edge is being phased out I think the escape is getting options to fill some of the void left.

I want a bigger screen, what's with the useless cubby? Whine whine whine !!! Got some cheese to go with that whine lol. Honestly I could care less if it came with a screen or not. The fact that it has even a small one, and can use my Google maps on it is a large bonus for me, even with the smaller screen.

Let’s be real, if they offered this it’d be buried in the Lux package or 360 Assist at an increased price and end up causing an even tighter constraint on it.
