Yeah, "Dynamic Radar Cruise Control" is what Toyota calls it, and my last vehicle was a Camry with that tech. It did not have this problem, and the emergency braking worked great also.

I have had it happen using both regular cruise control and adaptive. Even with the regular cruise control it could still be a safety feature the truck has due to the DCC hardware being on the truck. It would be interesting to know if anyone without DCC has experienced this.
To that aspect - a potential bug.
Not supposed to work except in ACC.
But it accidentally does.
Compared to just CC.
(I could see them using that method for drivers unaware they aren't in ACC and thought they were, or absentminded/distracted - in extreme situations)

What trim comes with only CC now?

Actually - some with pre-25 commented they've seen it with ACC.
I only have CC.

I'll see if I can become a hazard on the highway later.

Sorry
My point exactly.
You/Driver have to do something to enable cruise control and/or adaptive cruise control.
The op @Busa789
never said, that he had Cruise Control or ACC on. That's why I went with Collision Avoidance Assist.
Now if the OP states, that he never initiated cruise control or ACC that's a whole different ball game.
Is it possible that he didn't realize that his truck has adaptive cruise control🤷‍♂️
I wasn't clear in my reply. I meant the adaptive cruise option can be turned off and remain off or on and remain on. The activation of it each drive requires the steering wheel inputs. Sorry about that.
I did have to change the setting for pre-collision to the middle sensitivity. An intersection I have to turn left at almost every time I leave the house has 2 left turn lanes in each direction. If I am in the right lane of the left turn lanes, sorry if this is confusing but don't know a better way to describe it, when I turn I am so close to the left turning vehicle from the other direction it was putting on the brakes. With it at the middle sensitivity I will get the flashing warning if there is a semi in the oncoming turn lane. I try to use the left lane of the left turn lanes, sorry again, when possible.

It might be interesting, but to me it's never happened.
The XL trim does not have ACC as an option, but with the AWD and 4K package, I have CoPilot, so I got all of the nanny state features I've grown to like.
I do have automatic emergency braking, it's enabled in "normal" mode , and with non adaptive cruise control enabled it never has activated inappropriately.

Cars have pulled in front of me and no panic braking, but when someone at a stop light started up and then braked hard, it hit the bakes a fraction of a second before I did.

I suspect that with ACC, the trucklett is "over protective" as it's controlling the speed based on the behavior of other vehicles, while when you are in normal cruise mode, it's all up to the driver.
The braking sensitivity may also be impacted by the settings made in adaptive cruise itself.

There is no way for the truck to know the difference between a potential head on collision from the vehicle directly ahead turning left, as it isn't a full autopilot like a Waymo, but then it also can't drive itself into cul de sacs and get stuck either.

Toyota advertises their Safety Sense 2.0 (and likely newer versions) as protecting left turns. My Camry had it and it never interfered with normal driving. I also haven't had any issues with turning on my Maverick.

Ford Maverick Some form of automatic braking is annoying me Left turn

Correct. But after it slammed the brakes on once and almost got me rear ended to avoid the turning semi I changed the sensitivity. In this area when the left turn arrow turns yellow cars 3 or 4 back FLOOR it to make the light. I don't understand why they are in a hurry to get to the accident 🤣

Agreed - I suggested the same setting be reduced.
The last thing you need is a safety system causing an accident.
