Whenever I drive my Maverick Hybrid I need to reset it to ECO Mode. Is there any way it can be defaulted to stay in eco mode?

Unfortunately it is just another thing to do as part of the "get ready to drive" process.
Seatbelt, parking brake off, tap mode button 4 or 5 times, etc.

Good day

The seat belt warnings can be overcome by buckling all the seat belts up, in the back. (One less thing to click "ok" to, anyways).

Cheers

Yes! I put seat belt "clips" in for a while. Then used ForScan when I had it open for something else. Used to be so annoyed to have to hit OK multiple times or wait for way too long.

As far as Regenerative Braking with gas pedal, I do not see much difference in mileage between Normal and ECO.

Yep - theoretically there should be no difference as it is just adjusting the sensitivity of the brake and gas pedal (or regen effort w/o brake pedal pressed).

I prefer the increased regen braking in ECO.
In Toyota hybrids if you set them to ECO, it also adjusts the HVAC to cycle the compressor less and/or slower (I forget the details), so it has a positive mpg impact and isn't just playing with the pedal response electronics.
(*edit - per below, Ford seems to do this also!)

I also read somewhere that slippery mode gives you better fuel mileage.

The difference is certainly a lot more subtle than the difference to slippery mode, which requires a lot more pedal force for braking, at least at first. I've damn near run into things when I accidentally got it in slippery instead of eco.

In all modes it depends a lot on how you drive. I tend to be pretty gentle when driving the Maverick*, and I use the monitor and brake coach, and I get essentially the same mileage in eco, slippery, and normal. The modes just make it easier for most people - basically tricks them into being more gentle. (Sport mode is another story as it essentially disables all-electric driving. Haven't tried with trailer but expect the same.)
*I'm not nearly as gentle in my manual transmission Mazda 6.

ECO also reduces the A/C load, i've watched the battery load on forscan between the two and there is a difference. A/C in Normal mode uses 2HP worth of power when running.

Ah that may be. I dislike AC, and I live in coastal Southern California so I rarely need it.

Then the answer is unfortunately, no. There is no way to set Eco Mode and have it stick. I have that mymavmode, it's easy to install and works as expected.
Someone built a device that in effect when starting the truck it pushed the button for you. Try searching.
