Can't default to ECO mode? What does ECO even do for an ecoboost?

If you want eco, buy a hybrid. If you want Preformace buy a 2.0 turbo. I never considered a hybrid. Yeah I'm one of THOSE guys
Apparently, I am too. That would explain my terrible fuel economy. lol

I use ECO daily on my commute. Its 2 lane highways with mild traffic. Other than 2 small towns, I cruise at 60MPH. Engine is below 2K RPM 50% of the time. Below 2500 90%.

Hybrid would have been ideal for my use case, but the cost of waiting (in my case) was greater than the fuel savings.

Found out I can't default to ECO mode. Every time I start the engine it's in normal mode. I have to press the big button a few times to get to ECO.
A nuisance! But what does ECO even do? I can't find any difference in terms of mileage between ECO and Normal driving modes.
I guess it makes sense for the hybrid owners, where in ECo mode the battery can be more efficiently used.
But for an ecoboost, I can't think of anything that may help. Maybe a higher gear when cruising? Wonder how much gas that will save.
Such an annoying feature. How can it be, in 2023, that a setting can’t just STAY in the last selected mode??

I haven’t used any other modes but normal in my 2.0 and I average about 8-8.5L/100km
Better than EPA 🤷🏻‍♂️
