I bought my truck used so I haven't had it very long.
Recently I let my gas gauge go to 1/8 tank before I filled it up. I put 13.0 gal in the 13.8 gal tank. 1/8 of a tank should be approx. 1.7 gal. so I had about half as much in the tank as I thought. If I had been lazy (more than I am) and assumed I had a few more miles left before I HAD to fill up I would of run out of gas.
So, My question is: is there a way to correct the gas gauge using a OBDII dongle and software?

I saw you mentioned your 13.8 gallon Hybrid gas tank.

It's is a little bit bigger at 16.5

That's a bit of fiction. Just like the manual says that you have to have the ignition turned on to use the emergency fuel door release. Again fiction. As proven by "Mavster Mechanic"
Other than slight differences in the Hybrid gas tank pressure sys. they are same dimensional tank as the EcoBoost.
The the manual of my smart car says it has an 8.7 gal. tank. An owner made a video of him removing the tank to replace the fuel pump and physically measuring the volume at just over 10 gallons.

How many gallons can you put in a hybrid. This many.👇👇
This would include the filler neck presumably. Not a good practice.
There isn't 2+ gallons in the filler neck.

Hybrids have a pressurized fuel tank, meaning a bladder tank, inside a larger, regular tank. The bladder expands and contracts with the amount of fuel in it. It is always supposed to have a certain amount of fuel in it to function properly. The tank is also sealed to help keep your fuel fresh during longer periods of time between refills. This is why you are not supposed to run it completely dry or over fill it. If you have a water well at your home, it operates the same way to provide you with a fairly stable water pressure by keeping a bladder pressurized.

Pressure is relative. In the EB, the pressure is vented into an evaporative canister, which condenses the volatile hydrocarbon fumes and sends it back to the gas tank as liquid gasoline. That system is still venting the pressurized air from the gas tank, and that air still contains small amounts of hydrocarbons, even though the majority has been condensed out.

On the flip side, manufacturers that make hybrids want to get all of the legal and tax benefits of making vehicles with the partial zero emissions designation. To get that status, your vehicle has to operate part of the time without the gasoline engine running and have ZERO evaporative emissions. The way to achieve that is by having a sealed gas tank that never vents to the atmosphere, except when refilling.

In the Prius, they use a rubber bladder inside of the gas tank, like a big water balloon, that has no air gap in the bladder, which means no evaporative losses.

In the Maverick, they skipped the expensive rubber bladder and went with a still expensive reinforced gas tank and filler mechanism that doesn’t leak fumes and won’t deform or rupture under pressure. The reinforced gas tank is still more expensive than the EB tank and it’s not needed to meet the less stringent base-line “low emission vehicle” standards that the EB has to meet.
