Google has done staged rollouts for years, it's all server side so you might get it today or you could get it in a few days.
You can test all you want in house and with a beta test but until it is fully public, it is quite possible to find a crucial bug once it starts rolling out to more users because there is too many variables across all the different devices and setups.
I know this first hand with android and finding a critical bug when you roll something out to everybody that you now have to fix yesterday is no fun.
