I’ve been inspired by @STARCOMMTREY1 to drive my hybrid in Eco mode. Is there any risk in having this set all the time?

All reward then! It makes the Mav a bit sluggish though.Absolutely no risk
But the extra dollar I save! I want to try Sport mode soon. Why not let loose? You're already getting 37+ MPG. I used to hypermile with a toyota yaris. I could eek out 45mpg with it. I had to over-inflate the tires (max sidewall pressure instead of vehicle recommended), turn off/coast regularly...including at speed (was a manual), time traffic lights - all the hypermiling techniques. It was dumb.
Now, you have a great truck with a better overall MPG rating that also has about 85 more horsepower. I promise you it isn't worth another 2mpg to stifle the engine and give it anemic performance. Enjoy normal mode, give sport a try!

I’ve been getting 45 mpg, with very little compromise. The hybrid Maverick is reasonably peppy even in Eco mode. Why not let loose? You're already getting 37+ MPG. Ouch! I’ll try it for a very short distance.25 mpg in sport
What Sports mode does is pretty much leave the engine on under almost all driving circumstances. It'll still switch off going down hill or stopped, but if you push on the gas, the engine will go (Or at least that's what my Sports mode is doing). Its fun if you want to make noise, but I really don't think you're going to get meaningful performance out of it.Ouch! I’ll try it for a very short distance.
To me the sport mode feels “engaged” and highly responsive to even small adjustments on the pedal. The mpg hit is not extreme from what I’ve seen. But I’m usually on ECO with mostly town driving. I don’t drive fast, I try to travel in relaxed mode. But sport mode feels nice sometimes. What Sports mode does is pretty much leave the engine on under almost all driving circumstances.
