On my 2024 Lariat, I've noticed that when going downhill that the transmission drops to a lower gear. This can be a problem on icy slopes. Is there a way to prevent this?

Also, a light touch on the throttle will prevent regenerative braking allowing some freewheeling (coasting). Even in slippery mode.

Lower gear on a hybrid? You mean the regenerative braking?

Your profile says you have a hybrid, there is no gear dropping. If the battery is fully charged you will get engine braking.

If you want 100% friction brakes and nothing else, switch it into "N".

However it is unlikely this would be any advantage to you.

And human error then (braking too hard) is probably more likely than just leaving it alone.

Next closest is "slippery" mode, the gentlest of any mode.
