Maybe I am missing something. If a crook downloads the Ford Pass app and enters your VIN, what stops him from stealing your pickup? Should we not cover the VIN?

He would still need a key or fob to drive away... but if you want to worry, the crooks need only a good OBD scanner and can clone a key fob from your front seat.
Plus your VIN is clearly visible through your windshield

you have to confirm access to the ford pass app inside of the vehicle when it's turned on. So the crook would need to have your keys and sit in the vehicle with it turned on for at least a few minutes. In that case, he's probably better off just driving away with your truck. 
This. The riskier situation is if someone tried to link your VIN via their app and you didn't notice it and blindly "accepted" it on your dashboard without reading the notice first. But even then, as @brnpttmn said, all they could do is lock/unlock/start your truck. They would not be able to drive off with it. Ahh, there you go.(The salesman demonstrated how you can set your truck up to start at a certain time every day from the app. Yikes.)you have to confirm access to the ford pass app inside of the vehicle when it's turned on.
