So I'm wanting to level the Tremor, bc there is a 1" rake and I'd like to get it even. (won't be towing, so don't worry). I know there's a split crowd on leveling, not looking to open up that can of worms. But wondering if a standard spacer kit or a strut lift kit is the solution ... ?

I know some have said the suspension rides differently afterwards with a spacer, which is why Iwas looking specifically at the Zone Offroad kit, which splits the spacer into two parts top/bottom and keeps the load off the shock ( 1" Leveling Kit | 2022 Ford Maverick – Zone Offroad ) And I like that it's a steel kit, and not plastic like the Rough Country.

BUT ... I also know what a true lift strut will give me the best possible performance and handling. The Rough Country 2" lift strut ( Loaded Strut Pair | 2 Inch Lift | Ford Maverick 4WD (2022-2023) | Rough Country ) seems to be the way to go, I just am unsure if it's going to give my truck a nose-up stance or not ... The Tremor comes from Ford with a 1" lift (spring based), so I'm thinking if that's removed and I replace it with a 2" lift strut, that it should level the truck. The 2" lift in the front with the 1" lift for the Tremor package in back SHOULD give me an even ride, and the best possible handling/ride/performance, right?

Am I missing anything??

Yes you are. The increased angle on the CV joints means that you will need to replace them sooner. Also you will need longer anti-rollbar connectors will need to be replaced with longer rods to avoid bottoming them out.
A better solution would be lowering the back end with different springs installed. Of course this will also reduce your load limit, but that's the most obvious cost of leveling perfectly.
If you really need an absolutely level body, maybe you need an SUV instead of a truck. Just saying...

You risk upsetting the wonderful ride and handling that your Tremor has right now. I put a 2 inch lift on my previous XL Maverick . It did lift the truck ,but runed the ride . Buy the way I kept records of before and after measurement with the 2 inch lift . When I first got my Tremor I took measurement in the same locations . The Tremor sits a half inch higher stock then a XL with a 2 inch lift .

Leveling decreases gas mileage as well as what other have stated

I'm not sure I would put a lift kit on the tremor. It already has a 1 inch lift compared to the non tremor Mavericks. It has better suspension as well. I did use the RC 2 inch strut kit on my FX4 and love it. If you do decide to lift it make sure the kit is designed for a Tremor.
