Probably not. Probably like an SUV, most likely like the current Escape Hybrid that you can go test drive now

Nope.
1. The Maverick is 10-11" taller than your average car and you're sitting higher.
2. Because it's a hybrid, if you decelerate for turns and brake gently you'll recharge your battery and put no wear on the brakes.

It was either Motortrend or Car and Driver that said the 2.0 Ecoboost ever so slightly outhandled the hybrid on the Escape. The AWD ecoboost gets a fully independent rear suspension, and that's still superior to twist beam rear axle even if it does have fancy springs.

One of the biggest changes you will likely feel is that the Maverick has a long wheelbase. The longer the wheelbase, all else equal, the smoother the ride. However, it also makes vehicles feel less nimble, something I really noticed when racing around in a 500 Abarth (one of the shortest wheelbase vehicles you can buy) and a Charger Scat Pack, the little Fiat felt crazy flickable and would even rotate coming off throttle in a turn.

I expect the Maverick will be very car-like by truck standards, but if you're looking for performance car handling, you really need to look at shorter and lower cars. Maybe buy a hybrid Maverick for comfortable efficient cruising with a super practical design, and buy a used V6 Camaro to rip around in after the market gets back to normal (I noticed they are SOOO overpriced right now). If you had to have only one vehicle to do it all, I'd probably go Maverick AWD ecoboost w/ tow package and see what the best performance summer tires are you can find.
