how do you keep it in ECO mode?

Theoretically you could turn off all the other drive modes modes with Forscan and only have eco, but I haven't seen anyone try it yet. I think its a gimmick though, I get 1-2 mpg better in normal mode. I've tried it a few different times
I think having the ECO coach on helps, it gave me more insight to the working of hybrid / electric performance.

That's true - that's the only way to know how close to toeing the line you are for Go and brake pedals.

Sounds like the 25/26MY don't make it as easy to see this info.

EV COACH - HYBRID ELECTRIC VEHICLE (HEV)

EV coach can help you get the most out of your vehicle's electric driving capabilities.
Note: EV coach is a selectable screen.
When you are accelerating or maintaining speed you see a blue or white solid bar indicating vehicle power. You may also see a blue rectangular box which shows the power level at which the engine turns on.
  • When the power level is within the box, the color of the bar is blue. This means you are in electric operation and the engine is off.
  • When the power level is outside of the box, the color of the bar is white. This means you are in hybrid operation with a combination of the electric motor and the engine providing vehicle power.
When you are decelerating with either your foot off the accelerator pedal or on the brake pedal, a green or white solid bar displays indicating the power being used to slow down your vehicle. You may also see a green rectangular box which shows the amount of power that can be recaptured by the regenerative braking system and returned to the high voltage battery.
  • When the power level is within the box, the color of the bar is green. This means that the regenerative braking system is being used to efficiently slow your vehicle down and return the maximum percentage of energy to the high voltage battery.
  • When the power level is outside of the box, the color of the bar is white. This means both the regenerative braking system and conventional braking system are being used.

I get phenomenal mileage in ECO mode but every time I turn the truck off I have to reset it when I start up again. is there any way to make it lock into ECO mode
How are you "reseting it"?

Since you have 26 - have you ever made sure your belt is locked, and then Start truck, and watched the screen for the prompt that asks if you want to keep the last driving mode used?
And selected OK instead of allowing it to time out?

Then you can do the same thing with next prompt to keep the last MyView.

I don’t know about ECO mode - but the prompt to return to SPORT mode lasts about a second. If your thumb isn’t already on the “OK” button ready to push - you lose. Prompt disappears faster than you can read it.

The green prompt telling you that your seatbelt is fastened stays on forever until you press “OK”. Press it twice without trying to read the quickly disappearing “return to previous mode” prompt:)
