Would like confirmation on whether or not changing your color once banks close will do anything at all to my priority/spot in the queue/schedule date.

Does this include going up a trim level or do you have to stay with the same trim once you order it?It won't, as long as your build hasn't been chosen for production. You can add or delete any packages or accessories up until that point.

Constrained options shouldn't affect your priority code but it probably will affect when your car is actually built and not pushed back after scheduling because you're picking constrained options.
I would keep the ones that are easy to add aftermarket and remove them from your order. Things like bed covers, tonneau covers, or the mud guards you could easily add yourself.
