When we test drove a Mav I had the same problem. (4'11")
The salesman did exactly that! The Lariat has adjustable head rests. I may see if I can find a pair to switch out eventually.

How do you fully remove the front headrests on a 2024 Maverick? Mine seem to fully extend, but then stop. I am reluctant to pull on them too hard

Yep, just spin the headrest around 180°. Adjustable headrest from a Ford Escape also fit rather tightly.
