I won't get my 2023 Mac XL until next but I was wondering if the Apple CarPlay would work plugging into the USB-C port? Asking cause all the images I have seen people are plugging into the USB-A port.

Some other brands limit which of the front USB ports can be used with Android Auto/CarPlay (only A or only C). Ford does not, so the choice is yours. Just know that only the two below the climate controls will work, the ones on the back of the center console are charge-only for the rear passengers.

My wife has used an iPhone with the USB-C port in her 2020 Escape since we bought it with no issues.

yes since all new Apple iPhones use USB-C
Point of clarification: the iPhone itself still uses Lightning, but the plug is USB-C on the other end. Which is great since Apple doesn't include charging plugs anymore because everyone already has plenty that will work...
