Dash cam power...

I want to run a dash cam only when the car is on so it turns on/off with the ignition.

The "cigarette" lighter is always on.

Where can/should I pull power from to power my cam?

Dash cams typically come with hardwire kits that contain this as a module in line with the cable. One end allows you to connect to 12V constant, 12V ignition, and ground and goes through the module that regulates it to the appropriate operating voltage (5V typically). You do not need extra equipment in the majority of cases.

Good point dash cam's run on USB 5V so I'll grab 12V someplace and solder in a 5v converter.

3 works for Hybrid (Turns off during stop/start for EcoBoost).

Easiest way is to install a fuse tap and pick a fuse that only powers on with the car. There are also plenty of 12V to 5V USB converters that you can splice into an existing circuit. A good place to look for the splice option would be behind the overhead console or headliner.
