I've noticed the opposite at times: Sometimes -even on a level grade- when I don't have auto hold on, it seems to be engaged as 'stuck' when I take my foot off the brake, and only idles forward after a touch of gas. Anyone else notice this?

Yep.
More than likely, what you're feeling is Hill Start Assist.
Bear in mind, unless you're on something that is pool table level, even a stiff wind pushing your truck will cause Hill Start Assist to engage for 2 seconds after removing your foot from the brake pedal.

I wonder why Ford did not use a "foot" as that is what is used for the brake??

They would have to do foot with slash through it for "no foot needed"?
