Looking at a wheel set that is 18 inch diameter, width of 7 inch and an offset of 47.5MM. Tires size is 225/60/18. Seems similar to other options that people have posted, but offset is a little larger. Worried about the offset that it may rub. Thoughts?

You’ll be fine. I had 18x8 with 235/60 tires. Your set up will have 1mm more inner clearance.

I have a much larger tire with an offset of +42 and very very slight rubbing on a full lock and slight compression. 1.5” level kit on front also
