I'll be out of the country for the month of October, and the Maverick will just be sitting in the driveway. If I use the FordPass app to remote start the vehicle occasionally, will that be enough to keep the battery out of "Deep Sleep?" Or would it be enough to remotely unlock and re-lock the doors? I'm assuming I'll be able to do any of this via wi-fi from my hotel room in Berlin/ Rotterdam/ Prague etc...

Nobody knows, not even Ford.

I would set a scheduled start every few days in the app.

Leave your 12V Battery connected to a drip charger ... this will keep all the "clickety" items happy - and will prevent reports from those items that "we've reached critical charge levels and need to report that we're going into "deep sleep" mode to conserve energy" - you'll return to a ready to drive vehicle ... I speak from experience.

Use something like one of these ...

I went overseas for a week and a half. I used the FordPass App to remotely start it ( with roaming cellular charges) twice during my trip . It was funny when my next door neighbor sent a message about why my truck would mysteriously start with me 5500 miles away.

I don't like leaving bat. chargers on 24/7. Especially when I'm not at home. My friends house burned up from a bat. charger left plugged in. Not safe. Ask any fireman.

Never use an unattended battery charger in an improperly ventilated area and one that does not have (multiple) in line fuses as (multiple) protection ... some items/devices require basic knowledge of the thermodynamics and electronics of the device and require some common sense on the part of the user ... I have two devices connected 365/24/7 to two motorcycles and the Maverick HYBRID when needed ... if unsure/ uncomfortable then do not use ... I asked a fireman and that's what he told me.
