This sounds absolutely normal as your truck is still learning fuel tables and transmission strategies based on how you drive. That being said, 3,000 rpm from a dead stop seems absolutely normal at this stage in the truck's life.

FYI: I am a Ford Technician, so I have half a clue.
How much "learning" does the computer do?

I don't have too many miles behind mine but my first impressions are that the eco-boost really takes off unless you're exceptionally delicate on the throttle.
This is my 2nd ecoboost. I also have an F150 ecoboost, so I'm familiar with how peppy they can be from a dead start.

How much "learning" does the computer do?
I mean, it's forever learning. But if you give it 15000 miles (25000 km), that's where it will have your driving habits mostly figured out (transmission and fuel). Keep in mind that this will reset anytime your PCM is updated during a recall or service that involves a reset.

Let the lead footers get ahead of you at the next stop light while you grandpa it and keep the RPM's below 3k in second and third gear. Then laugh and wave at the same people as gas stations while your 37mpg hybrid gas sipper glides by.

I test drove an XLT/2.0 awhile back and was wondering why the hell is it revving to almost 3k as I was just putting out of the dealerships parking lot. HMMM
