As in, cut the sides off the bed?

If so, probably not going to happen without a LOT of work. The Maverick is a unibody, so it doesn't have a frame like a conventional pickup truck. The side of the beds are structurally necessary. You would have to add a lot of metal, in the form of beams or something, to make this work.

Oh, makes sense. Could probably be done by some redneck engineers who disregard structural integrity.

I looked into the structural side of the maverick a while back. The bed is tack welded onto a frame that is fully welded into the body, the side panels of the bed are bolted into place and tack welded with 2, 1/2 inch beads to the body, it has a completely different look then the ridgeline. It’s more of a short SUV where they welded frame rails to the back of it and stuck a bed on it. The bed provides very little structural support, it even has cross beams attached to the rear “frame”

Kia just unveiled a new small commercial BEV family. One of the variants was a small flatbed. It looked awesome. Also stake beds, vans. Essentially anything you want. Looks about Maverick size, maybe a bit bigger - hard to tell from the photos.

This is the beauty of a BEV skateboard platform like GM's Ultium. Engineer the platform. Throw any "top hat" you want onto it.
