Former auto detailer here. First off, I'd make sure the inside of your windshield is extra clean. A thin film of crap builds up on the glass over time, even if you never use the defroster, and that will cause the windows to fog up prematurely.

Windex doesn't cut it in my experience. I like to use Stoner Invisible Glass in the spray can (sprays a much finer mist than the plastic spray bottle) with a blue shop towel (just a touch more abrasive than microfiber, leaves a lot less lint than paper towels).

If the windows still fog up, then try any number of anti-fog products like the Rain-X one. Ones for eyeglasses or helmets are designed generally for plastic and to be applied more frequently (like daily or so).

In a pinch, basically anything with surfactants would work for a bit, such as basic hand soap or shaving cream. Just don't go overboard otherwise it'll be streaky and hard to see through, especially since the inside of the windshield is generally not coated with anything from the factory.

The outside of the windshield usually has some sort of hydrophobic coating. You can check by just pouring a water bottle on the glass. The water should bead and roll off rather than form blurry sheets. If it's the latter then you'd probably want to Rain-X the outside as well. I apply Rain-X about twice a year and basically don't need windshield wipers unless I'm going slower than 20mph or so. Faster than that and the water just beads and flies off.

If your windshield is chronically foggy I would assume you have water getting into the cabin somewhere. Defrost while running a/c compressor should dehumidify the cabin well enough. The only time I've dealt with an unnaturally foggy windshield cabin water ingress was involved.

Do you have the split my rear window? I open mine and it will keep the windows fog free without being too cold in the cabin. My dog also loves sticking his nose out it.

One of my favorite products to use is Adams Polishes Brilliant Glaze. It helps with fogging up but also makes the windshield seem clearer.
