No, I'm in Wisconsin, not humid. Turns on randomly due to lack of use maybe. So intermittent I can't pin point it. Or it's a programming glitch. Your theory then it's on all the time due to humidity with the windows down, not the case.
It appears that the dew point is quite frequently Reached in Wisconsin. In mid summer driving past a cornfield at 72°F the humidistat can turn AC on to prevent fogging. Etc.....

If the temp is OK and I want to just roll down the windows, I turn the A/C off by pushing the power button on the bottom of the temp gauge dial closest to the driver (mine is a 2023 Lariat with dual temp dials).

I always want maximum MPG.

Therefore, I never use Auto Climate Control. 100% manual for me 100% of the time.

Auto is like running the home air conditioner full time with opening your home windows to control temperature . Wasteful.

To get 72°F air coming out of the vents, it chills it to evaporator temp (which is based on physics, not a button or dial on your dash) then it warms up the air to make it 72°F. Two steps. Wastes energy.

How much energy lost / saved can be debated all day. But it's more than zero.

I am on coldest temperature full time. I control how cold the passenger compartment is via fan speed only.

This puts least duty cycle on the air conditioner.

When ice is not running with truck parked listen to the compressor running with 1 or 2 °F lower than ambient temp settings then listen to it with 10 or more °F lower than ambient temp setting.

Yes it turns faster and is louder. Without the ice running it can be running fast and loud electrically. Some think they are hearing the ice but it has a "pecking sound".

You're not wrong.

But you're talking about something different than I am.
As I understand it, at least in the Hybrid, in the temp numerical settings the heat or cool happens until that temp is reached. If the setting is set to LOW or HIGH, the heat or cool happens without stopping = "Go for Max!!!".

Do you get 78°F air or cold as it can make until the cab sensor hits 78°F?

Most home A/C do not have blending ability. You get cold as it can make until the setpoint is reached, then it cycles off.

Most automotive A/C have blending ability. They can blend hot and cold to make "medium" temperature air.

What is your Maverick doing?

Try this:

What is your Maverick doing?
My maverick blends when their is a digital temp set. If If set to LOW it blows max cool until BIPPY FALLS OFF. Seldom use it but if I remember correctly does so at set fan speed. If Max Cool button pushed then it raises fan speed to max (7? 8?) and if I remember correctly the ice stays on due to electric demand that could overheat battery.
ETA: LOW apparently turns blending off.
