Has anyone installed, or plan to install an aftermarket head unit? I really want to swap out the crappy factory radio, but unfortunately the stock design does not make it an easy plug and play for a standard double din head unit.

Some of the remote panel units like the Stinger HEIGH10, or one of the Alpine/Pioneer units might work if someone (e.g. Metra, PAC) would make an integration kit.

Go buy an iPad mini. Every streaming video or audio with no restrictions while the vehicle is in motion.
That's fine for source material, but not as a headunit replacement.
A real headunit will provide that, plus a tuner (including HD), preamp outs - including subwoofer, time alignment, a proper EQ, iDataLink integration to retain your rear camera and vehicle integration (settings).

I've had mine in my truck since December, I don't miss the tuner. Even if I got a new head unit, the iPad would still go right in front of it. If I need the camera I just pop the iPad out (magnets hold it in front of the screen). But 98% of the time I just look out the back window. I have tracked down an option for the backup camera to be on the iPad along with adding a front camera. I will likely get that at some point down the road but it's not high on my priorities.
It's not for everyone, but it's the best thing I've done in any vehicle,

I could certainly live without the backup camera too.
There were a few double-din headunits that allowed phone docking about a decade ago, so I get the concept. I'm not really into needing the video (movie) or app requirements, opting for better audio instead, but I see the appeal for your needs.

That isn't the issue, it's the connectivity of aftermarket Amps. Using a Ipad mini you still use the same amp and wiring of the stock unit.

I have a full aftermarket set up with all new speakers, amp and sub. I might still add an EQ to the mix but I'm pretty happy with my set up. I thought about eliminating the stock head unit and going just the iPad to an EQ and amps, but I wanted to keep the steering wheel controls and dash controls. Every once in awhile it loses the Bluetooth connection to the iPad but I think that's only been 3 or 4 times in 6 months.
