Yeah, those sandwich an electric motor unit between the engine and transmission. Likewise the F-150 Powerboost and Explorer hybrid aren't (e)CVT. The non-manual transmission Hondas aren't CVTs either; they only have a fixed gear ratio and primarily operate in Series Hybrid mode.

If you want to get really fancy in theory you could order the non-CP360 mirrors with the integrated mirrors and remove a circle of the silvering on the backside to mount the BLIS LEDs.
Power generation from the DC-DC converter has nothing to do with the status of the ICE running or not. The converter draws from the high-voltage battery and the ICE will start based on the charge level of that.

Even after the VIN has been issued/build scheduled some changes can be requested by the dealer; mostly things like options packages. The factory needs to approve the order change.
It's worth noting that the Ford warranty only covers the hybrid drivetrain parts specifically. So other HV components like the A/C compressor aren't covered, and aftermarket warranties usually don't want anything to do with any of the HV parts. Whereas a Ford ESP would.
If you mean the common boilerplate phrase of 'Must take delivery from dealer stock' then that still applies for factory orders. Ford builds it and sells it to the dealer whose property it is until they sell it to you.
Your certificate should still work since the program was active when you ordered. Just a matter of the dealer selecting incentives at order date in SMART Vincent.

Capability certainly is also a factor, especially cooling. I recall when TFL did their Ike Test with the 4k it ran on the hotter end. And the Tremor doesn't have much headroom over 2k.
The main point is it would be a pretty dubious switch to declare the eCVT a hybrid unique drivetrain component covered under one warranty, but not a hybrid unique drivetrain component by the ESP where it isn't explicitly excluded.
