No it does not default to Eco mode, you have to get a little mode switcher that taps into the fuse box and one of the wires in the center console area in order for it to automatically switch to Eco mode. There are videos on Youtube of some guys who have done just that and it's super convenient...

The clicking noise is normal for hybrids. Has to do with occasional pumping mechanisms to keep the battery within temperature specifications. Congrats on the new Maverick!
