From your miles and time, it looks like you average about 15 mph.

By any chance are you spending a lot of time idling? That would cut the MPG.

Loving the truck 100000%. I just thought mpg would be higher. Anything I can do or will it just get better.

All new vehicles get better after the first 6ish months. This is normal. How much better? My last vehicle (2018 kia rio) went from about 33mpg to 40. So give it time. If youre still not happy… youll likely have to have a conversation with your right foot unfortunately
This right here. The fuel economy is going to get better (or worse) depending on your driving style through the break in period.
My 2.0 FX4 with the tow package has climbed from 17mpg to 23 within the first 400 miles. Best advice is to stay out of the turbo as much as possible through the first 1,000 miles and you should see some improvement in the MPG's.

13 hours of driving and 199 miles, that's a lot of low speed stop-and-go city driving I take it right? That gas mileage looks about right to me. The ecoboost begs for the beans so if you have a heavy foot like me that's probably part of the problem. If you want to milk as much out as you'd probably want to use Eco mode and drive like your grandma.
You're spot on here. That equates to 15mph average speed - well under the 'city' parameter the EPA uses for testing, which averages 21mph over an 11 mile drive (a full 30 minutes of the vehicle in continuous operation). A slower overall speed, and likely shorter trips are the major contributors to a lower MPG than EPA estimates.

I'm typically averaging 35-40mph (distance over time - wish this was actually shown in the Maverick's display details). I'm pretty much between the city and highway estimates (my 24.9 I would say is skewed down due to a cold winter with typically shorter trips so far). Current tank in (finally) warmer MN weather is showing 29, I expect to have 27.5 to 28 actual MPG for the current tank.

This trip total is at an average speed of 44mph - right about the EPA's highway test average. The OP's trip value is at an average speed of 15mph - this is not an apples to apples comparison.
