Dome light doesn't come on when I open the door after truck has sat a day or two

I've noticed the dome light does not come on when I open the door after truck has sat a day or two. Did I miss something once I get in and touch start button it comes on and times out when I close door. I would have thought it came on always when door is open?

Your battery voltage is dipping low enough for the vehicle to be going into Deep Sleep mode. So it won't boot the IC or turn on the dome lights when opening the door and the passenger side Intelligent Access door handle will be disabled to preserve power.

I'm assuming that is a normal process, I don't think I have the parasitic draw issue. I have never gotten a ford pass notification it went into deep sleep

It's normal, I had this happen with mine a couple time in the winter, often my Maverick only gets used once every 7 days.

It's odd that you didn't receive a FP notification. But it's likely you have a bad 12v battery IMO because it happened to me twice. Have the dealer test it over several hours, it will likely fail at least once during that time. It's the best outcome you can hope for.
