Apple apps via Apple play

Not to sound too much like a “boomer”, is it possible to add more apps from my Apple phone to what I can see on the infotainment screen? Or, am I just stuck with what the system allows me to use? I hope I am phrasing the question correctly.

Yes.

Go to Settings > General > Carplay > Ford Maverick > Customize.

from there you can add or remove or reorder apps on the Carplay screen.
