It is just like using the OEM mirror at that point.
(you lose wider view angle)

Turning it off and using like the OEM mirror is exactly what
I do when glare gets too bad (i.e. having moonroof open on sunny day).
that's good. personally, I don't like it when the rear view mirror is a screen instead of a mirror. it means I have to change the distance I'm focusing at from far (driving) to close (a screen right in front of my face).

2. Can the start-up jingle be muted?

You can change zoom on rear camera to make it look more traditional. You can mute it if you turn the volume off. Yes, display always starts on rear view camera/ last setting.
