Tune while only having downpipes and exhaust?

Hello! This is my first post and was wondering some things. I want to tune my maverick and I’ve seen some things saying it’s safe to tune stock and others saying I need to change intercoolers. I want to tune the trucks 2.0L eco boost for power through Diablo or SXT. My coolant temp is always at 180-192 even on a 90° day in humid southern Louisiana and intake rides about 70-80° sometimes 86°. Do I need to change the intercooler if it isn’t being tracked or driven hard all the time?

You can tune at any time, with mods from stock to wild. The coolant temps have nothing to do with the intercooler. Intake Air Temps spike pretty bad with the stock FMIC. And that effects power.
