As others have stated the curb weight of your trailer will determine how small of a truck you will need. If you are set on a Maverick get the 4k tow package. Doing what you plan to do in a tiny tow trailer is going to be a nightmare with 2 people. Short trips is one thing but months on end is another.
Next concerning living in a camper. I lived in one for about 2 years when I first moved out here before building the house I now live in. Get used to having uninvited house guests especially in the middle of the night when it is cold out. The only thing that sort of keeps mice out is using cotton balls with peppermint oil. Put them around the underside of the frame. Keep your food sealed else you will be dealing with bug infestations. Anything than can will inevitably make nests in pipes out exhaust vents so put screens on every point of entry for the fridge, water heater etc. Keep extra control boards for the water heater on hand. Usually the stock boards are garbage and go within a month or 2 of regular usage. The aftermarket boards are much better. Unless you want to wait potentially days or weeks to get repair tech out to replace one better to do it yourself. If you use the toilet enough the trailer will constantly smell like the black water tank. Replacing the standard black water tank exhaust vent cap with a 360 siphon vent helps immensely. If your tank can overpower one of those it is time to have the crap tank professionally cleaned.
