I understand why ford makes certain things revert to default after ignition off, but I can't figure out why it reverts to NORMAL when the previous mode was ECO, after all it's an ECOBOOST in my situtation, they may have just called the car Ford Maverick 2.0L NORMAL-Boost.

Another is automatic engine shutdown feature, reverts to default at the next ignition cycle, I know it's not a big deal to hit the button every time I start the car, but it's strictly a software setting, and I don't dare modify anything while under warranty, giving ford an excuse to refuse warranty service.
If you go to Spoet mode, Auto Start Stop is disabled by default. Really what Ford needs to do is allow you to create a "My Mode" that lets you have a favorite setting.

You mean Sport Mode? Yes that turns off auto stop/start but is not persistent.

but I can't figure out why it reverts to NORMAL when the previous mode was ECO,
there are many threads on this.

EPA certification/rating is based on the settings when turned on. Letting the mode change would require, at the least, certifications for each mode, and at the worst rejection of certification.

I noticed this little popup as well! It was a very welcome change, even though I would much prefer it to just remember my choice and not ask.

Oh, that is less exciting, I suppose. I think this little popup is covered up by the seatbelt indicator screen when not all occupants have yet buckled up, so that may be why I have missed it in the past.

No...not exactly.....the pop up is on even if you are by yourself and HAVE buckled up. You press OK to clear it or it goes away by itself in 30 seconds. Nothing to do with "all" occupants not buckling. It's comin' at ya even if you buckled.:cool:
