There is not much you can do.
You will pull your hair out worrying and you can spend more than the catalytic converter is worth trying to protect it.

The harder you make it to take off, the more collateral damage will be done and you will slow the thieves down by 30 seconds.

One type of device makes it difficult for saw blades.
One type of device makes it difficult for cut-off wheels.

Don't you think they show up with battery powered versions of both?
You bet they do.

Best you can do: park in a garage.
Second best, add a sprinkler on a motion detector. They won't mind cutting off your control device. They've had tons of practice. But they won't get their hoodies wet. 💡

Be thankful this is a relatively unknown vehicle. They mostly want Prius.
