Of the questions which I am able to answer, makes no difference whether ecoboost or hybrid:
1) No rear defrost on any trim.
2) Leather-look seats only come with Lariat trim.
Call the Ford line. They cannot give you any kind of ETA on build but can provide you with info such as (a) whether your order has been accepted and confirmed, (b) dealer # and order #, and so on.

It's rumored to begin happening December 8th. But until we hear directly from the oval's mouth of a date certain, that may be subject to change one way or the other.
Pure speculation but on its face it sounds as if the ordering system is glitched (would hardly be a first). Likely only a skeleton crew on duty for the holiday so there could be added delay until Ford's IT techs replace the hamster powering it.
This guy seems to know whereof he speaks, and pointedly does not recommend using Forscan (about the 1:04 mark). Would surmise the Maverick would react no differently than other Ford trucks with auto on/off.
Wouldn't at this point bother with yet another generic walkaround video review (and the guy is less than certain about some of the features on the XL Ecoboost he's filming), except this one includes a good look at the optional bed mat.
