Typically, I’d agree with you, but in this case a fifteen minute drive to Home Depot and back and 5 minutes inside the cab and the issue is resolved. Going to the dealer and having my dash taken apart and reassembled seemed like more effort for me with possibly inferior results (new rattles)...
The fix for this rattle is to cram a piece of window screen spline into the gap between the instrument cluster cover and the main dash panel. Takes 3 min. I used the smallest diameter spline from my local HD.

Mine changes throttle sensitivity quite a bit in Eco, very similar to our 2018 Prius in this regard. Significantly less sensitive . If you change modes while maintaining consistent throttle, you can feel quite a difference from Eco to Normal to Power.
Here is what I did to make my seats tolerable. 1) Cal King neosupreme covers. 2) three 1/8 washers installed under the bolts on the front of the seat track.

One could say the same you mention regarding ecoboost about hybrids. Plug in hybrids are also becoming an outdated technology due to full electrics.
Not to mention that for towing significant loads over long distances, ecoboost makes more sense for most people.
