That was the HPR Lariat I ordered. My husband ordered the RR First Edition. He bought the FE, and I declined the one in the photo so that the dealership could sell it to another customer.
Pretty sure that's how it works, period, for pretty much everything. If I order a storm door, and a builder orders 30 storm doors, guess who gets priority.
When you say "a hit," how many mpg's are you talking about? I live where temperatures are in the 90's now, and the Maverick's mpg has dropped from 40.5 to 38.9 over the last couple of weeks. I don't consider that significant, especially given all of the other truck model alternatives.
My first hybrid was a 2008 Prius, which I sold to my son in 2017 at about 130k miles. He drove it 5 years and sold it with about 180k miles. My 2017 Prius is now at 80k miles.

There's been pretty reliable data available for years that a/c in modern vehicles with the usual electronics makes very little difference in gas mileage. We live in the southeastern US, and our mileage is slightly better in the summer vs running the heat in midwinter.
Sales people may or may not know anything about Maverick price protection and 0% interest rate. Finance people at the dealership should definitely know about it. Try throwing out the term Smart Vincent, and someone there should know what that means.
The person who rear-ended the truck is supposed to pay for the repairs. Since the truck belongs to Ford (or the dealership, maybe), that's who should handle the whole process. It's up to you to decide whether you want to buy it after it's repaired - or not.
A very few hybrids appear to have some kind of electrical issue. 98% or so do not. It's pretty par for the course on new models of any new vehicle. They're still delivering hybrids so likely it's been resolved already.
The 360 adds a lot of utility to the Maverick, particularly the XL. I wouldn't drop it. I just wouldn't compromise on that. Ford is going to build your truck the way you ordered it sooner or later.
